Does frozen food go bad?

Not in the way fresh food does. The FDA says food that is properly handled and stored in the freezer at 0°F (-18°C) remains safe, and that it is quality that suffers over time: tenderness, flavour, aroma, juiciness and colour can all be affected (FDA).

That is why freezer times in official charts are not “expiry” dates. Health Canada puts it this way: refrigeration times are for safety, and freezing times are for quality (Health Canada). A steak that has been frozen for 14 months is not a hazard because of the calendar; it may just be drier and duller than one frozen last month.

Can frozen food expire?

The food itself keeps safe while it stays frozen, but a date on the pack can still matter, and so can the way it was stored. Two things change the picture:

  • The freezer temperature. The FDA says the freezer should be at 0°F (-18°C). Health Canada gives the same figure, “or lower”. A freezer that runs warmer is not covered by those times.
  • Interruptions. If the food thaws and warms up, the “safe indefinitely” rule no longer applies. More on power cuts below.

If a pack has its own storage instructions or a date from the maker, follow those first. The times in this guide are general guidance, not a replacement for a label.

How long does food last in the freezer?

Here are some of the recommended freezer times from Health Canada, for food kept at -18°C (0°F) or lower. They are for quality, so going past them is not a safety cliff. They are a good guide for what to eat first.

How long does cooked food last in the freezer?

From the table above: cooked meat and stews 2–3 months, soups 4 months, and cooked poultry and fish 4–6 months. Ready meals and leftovers made of several things are not listed as such, so a sensible approach is to use the shortest time of the ingredients that dominate the dish. The FDA also advises storing leftovers in tight containers, which helps their quality.

What happens to frozen food after a power cut?

The FDA says a full freezer keeps an adequate temperature for about 48 hours if the door stays closed. If the power returns and a freezer thermometer reads 40°F or below, the food is safe and may be refrozen. If you do not have a thermometer, read the FDA page for what it suggests checking instead.

A half-empty freezer is not covered by that 48 hour figure, which the FDA gives for a full one. When in doubt, decide by the temperature the food reached, not by how it looks.

Keeping the freezer under control

Because the limit is about quality, freezer food tends to be forgotten rather than spoiled: a bag of berries at the back for two years, a stew nobody labelled. A few habits that help:

  • Write what it is and the date you froze it on the pack.
  • Keep the oldest things in front and eat them first.
  • Freeze food while it is still good, not on its last day.
  • Use the shorter times from the table for fatty, ground and processed foods.
